Pig Meat Quality: Characterization and Improvement with Reference to Pse Pork

Porcine stress syndrome (PSS), controlled by a recessive gene, is responsible for the formation of poor quality meat (PSE and DFD). Various non-invasive and invasive tests have been devised to identify PSS-prone pigs. A reliable test for detecting the heterozygotes is essential for eliminating PSE-prone pigs. A simple test for selecting pigs to produce meat of excellent water holding capacity is described, and this could provide a potential procedure for eliminating PSE-prone pigs.
